DINKS
Today my dear friend, cube mate, and coworker, Jenn, found it her duty to inform me that Seth and I are no longer newlyweds (according to her assessment) and that we are officially DINKS (double income, no kids). This was all based on these facts: we own a house, have been married for more than a year, and I've learned the world of cooking and meal planning (go figure, because in my defense I still can't boil an egg without making them explode).
So my question is to all you out there when does it all change? I'd like to stay a newlywed, just like I'd like to be 22 forever.

Real Life
We've been missing from the blogging world and needless to say our connection depends on computers. Computers that fail us. It all stared two weeks ago when the hard drive on my personal Mac went out, my work computer followed suit a week later with a virus. The computers were repaired, one new hard drive and many hours later. The end result being, all my personal pictures and documents were spared, but I lost the last two months of all my work off the other one. Budgets, agendas and to do lists vanished with no explanation.
In the midst of the computer's melt downs. My car went on the fritz (on a date night with friends!) and had to be towed. Instantly my heart was anxious and I feared for the cost of the repair in light of all the major updates we had to do with my computer. My mind went to the worst, fearing thousands of dollars worth of work on the car would result. In the Lord's mercy the repairs were minor and we were able to get Margot fixed at minimal cost to us.
The past few weeks have been full of joys, new babies (born and conceived), showers with dear friends, date nights with Seth, birthday parties, a move, and wonderful times spent with the Lord. I see the Lord's hand in it all and it was the words of a dear old friend, Mr. Spurgeon, that encouraged me in the moments where I was tempted to fear:

"Do not fear! Has not God helped you in every plight already? When we cast our cares on the Lord, to do as He wills, at no time will He be unkind. He will never put is in the furnace unless He intends to purge our dross, and the furnace will not be one degree warmer than is absolutely necessary. Mercy will always balance misery; strength will always support burden. The Lord is our friend; He will never be our foe."

Otters Need their Loveys too
My dear friend Rachael sent this video to me and it was just too cute to not post on, I think it pretty much made my day. Did I forget to mention that otters are pretty much one of the cutest animals and if we had a pool in our back yard we would totally get one as a pet?
I wanted to post the actual You Tube video, but I am absolutely inept when it comes to technology. So you can check out the video here:

Recipe of the Week
New Chicken Parmesan from Bon Appetit
1/3 cup extra-virgin olive oil
2 large garlic cloves, pressed
1/2 teaspoon salt
1 12-ounce container grape tomatoes
1 1/2 teaspoons dried oregano
Large pinch of dried crushed red pepper
4 skinless boneless chicken breast halves (about 6 ounces each)
1 1/4 cups finely grated Parmesan cheese, divided
6 ounces fresh mozzarella cheese in water, drained, thinly sliced (I used a fresh log from TJ's and it was much cheaper)
Preheat oven to 500° F. Whisk first 3 ingredients in large bowl. Place tomatoes in medium bowl; mix in 2 tablespoons garlic oil, then oregano and crushed red pepper. Add chicken to large bowl with remaining garlic oil and turn to coat.
Place 1 cup Parmesan in pie dish. Dip 1 side of each chicken piece into cheese to coat; arrange chicken, cheese side up, on 1 half of large rimmed baking sheet. Scatter tomatoes on other half of sheet.
Roast chicken until just cooked through and firm to touch, about 10 minutes. Arrange mozzarella slices atop chicken. Return to oven; roast until cheese melts, 1 to 2 minutes. Transfer chicken and tomatoes to 4 plates. Sprinkle with remaining 1/4 cup Parmesan cheese.
Roasting the chicken breasts kept them moist and made for great flavor. I served it with brown rice penne and home made tomato sauce.
